What is Milk Clarification?
Milk clarification is a bartending technique dating back to the 1700s. A finished cocktail is combined with cold milk — natural acids from citrus and the alcohol itself interact with milk proteins, causing them to gently separate into soft, cloud-like formations.
These protein formations create an extraordinarily fine natural filter. As the cocktail slowly passes through, it captures color pigments, tannins, and microscopic particles — everything that makes a cocktail cloudy or rough around the edges.
What remains is a cocktail that's perfectly transparent, impossibly smooth, with a velvety mouthfeel that lingers. The same cocktail, elevated to its most refined form — quality you can see and taste.
Dairy Milk
Our primary clarification method. Cold whole milk provides the protein matrix that filters each cocktail to crystal clarity, with residual lactose lending a subtle, silky mouthfeel.
Coconut Milk
A dairy-free variation under consideration for future expressions. Full-fat coconut milk offers the same protein-based filtration with a whisper of tropical richness.
Oat Milk
A plant-based, allergen-free alternative under consideration. Oat milk provides a strong protein structure for clarification without introducing common allergens.

How We Make It

The Blend
Each cocktail recipe is built from scratch with real spirits, fresh-squeezed juices, and house-made syrups, measured with precision before clarification begins.

The Separation
The finished cocktail is slowly combined with cold milk. Natural acidity from the citrus interacts with milk proteins, coaxing them into delicate, cloud-like formations that create a natural filter.
Step 03
The Clarification
The mixture is strained through the milk-protein web — a natural filter of remarkable fineness — which captures color, tannins, and harsh compounds while letting the clarified liquid pass through.

The Finish
The clarified cocktail is carbonated for a crisp, effervescent finish, then bottled. The result: a shelf-stable, silky-smooth cocktail with flavors that are rounder and more refined than the original.
